I remember writing about the launch of the Aberargie Inaugural Release not too long ago, covering the story, the ambition, and the return of the Morrison family to distilling. At the time, it felt like one of those releases you watch closely rather than immediately experience. Fast forward a little, and I’ve finally had the chance to sit down with it properly.

Not only that—but in a rare twist, I was also able to taste the individual building blocks of this whisky: the sherry cask and bourbon cask matured components separately. That kind of insight is a luxury you don’t often get, and it adds a whole extra layer to understanding what ends up in the final glass.

What Makes This Whisky Stand Out

Before getting into the tasting notes, it’s worth highlighting what makes this inaugural release genuinely interesting.

This isn’t just a vatting of casks—it’s a carefully constructed marriage of sherry and bourbon matured whisky. And having tasted both components individually, I can tell you they bring very different personalities to the table.

The bourbon cask side is bright, fresh, and cereal-driven—classic malt-forward whisky with citrus lift and gentle sweetness.

Finish

Medium-long and warming, the finish carries a mix of charred oak and lingering liquorice root.

Vanilla syrup softens the edges, while a gentle spice emerges—cardamom and nutmeg adding a final flourish without overpowering the experience.

It fades gradually, leaving behind a slightly tannic dryness that reminds you this is still a young whisky finding its voice.


Food Pairing

The Aberargie Inaugural Release is a whisky that thrives alongside bold, rich flavours.

A proper blue cheese—think Stilton or Shropshire Blue—works beautifully, the saltiness and creaminess amplifying both the sweet and earthy elements of the dram.

Alternatively, lean into a classic pairing board: dates, nuts, raisins, maybe even some candied orange peel. Build it right, and you’ve got the kind of setup that makes you forget about everything else for a while.

Is it perfect? No. But it’s not trying to be.

What it is, is a genuinely promising start from a distillery with serious pedigree and a clear sense of direction. And if this is the baseline, I’m very curious to see where Aberargie goes next.
